The real Extra Virgin Olive Oil comes from the first pressing of olives ideally picked by hand, milled within hours, and crushed by a simple hydraulic press or centrifuge. Unlike other cooking oils, it’s the only one unrefined, free of chemicals and other defects like rancidity, and never treated with high heat.
The acidity level of the Extra Virgin Olive Oil must not be over 0,8%.
