In Turkey, the olive harvest season starts in October. Early harvest is obtained by picking and pressing green olives earlier than the normal harvest period. The taste of early harvest olive oil obtained from green olives is sharper and the level of burntness is slightly higher. It is a type of olive oil with an acid ratio of less than 0.8 and can be used mostly for breakfast and salads. Since the olives are not filtered during production, there is a little sediment at the bottom of the packaging of the product you receive.
