Matcha is obtained by green tea (Camellia Sinensis) being processed in different techniques, it is known as Green Tea Powder or Green Tea Extract.
Matcha’s process starts 50 days before the harvest of green tea, by putting black cloths over the leaves of the tea. These cloths block the sun light from the tea plant which makes the plant have difficulty to photosynthesis, so the plant starts to produce extra chlorophyl. With this tecnique, phenolic compounds which are beneficial for human health rapidly increase inside the plant.
When harvest time comes, the plant gets picked by hand, without the touch of scissors. The plant is sorted from unwanted fibers and streaks; then gets grinded in a stone mill. This step makes the phenolic compounds easier to get invloved in water, thus the absorption capacity of the body increases. Thin particles, which can get through strains that are 400 microns, are made. This milling process alleviates the bitter and astringent taste. One cup of matcha tea is equivalent to 10 cups of green tea. It has 60 times more antioxidant content. Since it is a pure and natural product, it doesn’t have any damage to human health.
